throwing this here because the topic is getting louder and my confidence is not getting better.

Keeping acidity alive in low-density coffees feels harder than people admit

forum talk makes it sound simple. actual work does not. numbers can look fine, cup can disagree, workflow can look smooth then break once the pace gets busy. that gap is what bothers me.

for anyone who has repeated this in real work, what stayed true after the first nice result?

people keep calling it small detail, but three small misses together can move the cup a lot.

if notes are weak, this topic goes in circles fast. everybody remembers the best batch only.

for us the useful part was not the idea itself, more the discipline it forced on the team.

we saw benefit, but mostly on the harder coffees. forgiving lots hide the difference too easily.

my problem is theory sounds clean, production never is. that gap is where this gets annoying.

equipment condition gets mixed into this discussion too often. sometimes the concept is fine, the machine is not.
