Why are more roasteries building re-roast decision rules instead of leaving it to gut feel?

Some teams are now writing formal re-roast or hold rules for batches that land outside color, time, or cup expectations. Before, these calls were often left to the most senior operator. I can see why systems people like written rules, but do they actually make better decisions or just safer politics?
