all I know is there's only light, medium, dark. But there's also light-medium, medium-dark, city roast, full city, french Zroast, Italian roast

That's all. What's the difference? And how many levels are there?

no universal single standard. There are some systems to use. SCA has color disc with 8 reference points. The American classic system: Cinnamon, City, Full City, Vienna, France, Italy. special world usually uses light / medium-light / medium / medium-dark / dark. They're all different grouping versions of one continuum.

cara paling objective untuk tentuin roast level itu color measurement pakai Agtron atau device sejenis, yang kasih angka dari 0 (gelap sekali) sampai 100 (sangat terang). specialty range biasanya di 50-75 Agtron untuk whole bean.

if you want to be simplified: imagine the continuum of the very light to the very dark. specialty coffee roasters usually play in more light zones than the average person knows, because that's the more preserve original character. commercial coffee is usually in medium-dark to dark.

French and Italian roast is at a very dark level where the original character is almost all gone and what's left is the taste of roasting itself: bitter, smoky, charcoal-y. It's intensive for certain applications but not for specialty.

i also just found out there's this Agtron system. So more of a number, not those level names. interesting
