salted coffee / savory?

i tried salt coffee, egg coffee Vietnamese, Spanish latte with pinch of salt. Well, to be honest, there's something surpersonal.

The salt coffee isn't new, it's been in Taiwan and Vietnam for decades. But why is it only viral now? And is this a genuine flavor movement or just a content cycle looking for something different?

There's a barista or cafe owner that's been personally entered a savory option onto the menu and can you tell me the official market?

the salt is technically flavor enhancer, not "new flavor." Pinch of salt in espresso's chemical reduction bitterness. Some barista competition has used this technique years before it went viral in Tickook.

try selling at the cafe next time. viral hype, very good. it's a month later. it's still on the menu, so basically novelty, actually.

vietnamese egg coffee is different. It's genetically complex in flavor, not just shock value. But it takes skill and prep to be honest.

is that egg coffee on a permanent menu or just special? and the food safety issue. what about raw egg?

pasteured egg, served warm. There's a couch if you want to do it properly, not just anyone.

this savory direction is interesting to diverate from sweet- heavy trends. But it has to have a strong story to sell in Indonesia which is the dominant sweet tooth.
