How much should community spaces depend on one very active organizer?

I am curious about depending on one very active organizer in a community because coffee community often grows faster than its habits. When that happens, the same problem repeats in different places. I would rather hear from people who have seen it directly than from ideal theory.

From what I saw, depending on one very active organizer in a community improves when the group leaves room for different levels of knowledge. If only very confident people can speak, the space shrinks fast.
