On paper one shared roast schedule for multiple sites sounds efficient. In practice people tell me it creates friction because each site has different rush hour, different packing rhythm, and different local sales surprises. Why does shared scheduling break so quickly once more than one location is involved?

Because one master schedule usually reflects one site reality, not all sites.
