processing isn't just about postit's about a value creation that is often ignored

already too often see processor treated as a technical stage to be completed, not as layer of built value.

The ICO data in the 2023 report shows specialty lot with well-documented processing can be appreciated 150- 400% above commodity price for the same original. But not all farmers or processor have access to the premium market because of one reason: no documentation and no divergence that can be converted into the buyer.

Most common: farmers with cherry quality but standard process and no story behind it, the price is not far from commodity. While other farmers with cherry quality are similar but process is documented, branded, and able to trace, can be significantly higher.

It's not about cheating or empty branding. If the process is genetically different and consistent, the documented branding is legitimacy value creation. Well, if it's the same quality base, but you can tell me a specific and verifiable profile story,

Question: where does the start point for farmers to start building processing as value? Do you have to go straight to the exotic processing or is there a more realistic incremental step?

from field experience, the earliest step for small farmers is consistency documentation. it's not an exotic method. if you could just point out that this month's lot is the same as the lot last month from the same lot block, it's been valuable proposition for a long-term relationship buyer. exotic processing without consistency record is expensive but not viable.

the buyer I talked to, particularly the specialty roasion in Japan and Denmark, the first question is not 'what process?' but 'is consistent what?'. If there is no track record, even exotic process is hard to sell as a reliable contract.

i once tried to climb into a more premium tier with a more attention-detesting processor. the results are good in the cup but the consistency isn't stable because my monitoring capacity is limited. eventually the buyer can't get into regular lineup because they need consistency. studied lesson: better consistent 83-84 is reliable than unpredictable 87.

itu persisnya poin penting. value di specialty chain itu bukan hanya dari score tertinggi tapi dari predictability. roaster butuh bisa plan menu dan pricing mereka, dan itu tidak bisa dilakukan kalau supply-nya inconsistent. start dari consistency, baru scale ke complexity.

realistic starting point: if processing infrastructure is still simple, fix control at the most critical point, fermentation timing and drying. These two points are the most generate asset if not properly managed. The data from Kenya Coffee Research Institute is saying that the inconsistencies of Zfermentation and drying are the main source of cup design at the farmer's level. fix this first before investing into exotic methods.

for processing documentation, it's a format. any specific standards or enough to record itself in any format?

no universal standard format. Its content: harvest date, block / garden, variety, method fermentation (time, temperature when measured, pH if any), drying duration and temp, moisture final, and cupper name if we have ZZZCF001Z record. Photo documentation is also very helpful. Professional buyer usually has its own template to ask for, some of which also share spreadsheet to their suppliers.
