Cooling setelah roast harus secepat apa? Dan apakah cooling tray yang masih panas dari batch sebelumnya itu masalah?

halo semuanya

ini pertanyaan yang mungkin sepele tapi beneran bikin gue penasaran.

cooling setelah roast itu seberapa cepat harusnya? di mesin gue cooling tray bawaannya biasanya biji dari drop sampe adem itu sekitar 4-5 menit. tapi kadang kalau batch cepat cepat dan gue lagi banyak order, cooling tray masih panas dari batch sebelumnya dan biji baru langsung masuk.

yang gue khawatirkan: apakah ini ngaruh ke rasa? soalnya ada yang bilang kalau cooling kurang cepat bisa carry over roast dan bikin biji over-develop sedikit.

terus pertanyaan bonus: ada yang pernah improvisasi cooling tray? teman gue pernah bilang dia pakai kipas tambahan. itu worth it apa lebay?

yes, it is. Slow-cocking seeds are still carry- over heat, The ideal standard is that seeds have to be cold in four minutes or less. That's six to seven minutes at risk, especially if your target is light to medium.

it's still a reasonable limit, but if you can chase it to 34 minutes better. Depending on batch size and airflow cooling trays.

the cooling tray heat from the previous batch is all it takes. i usually give you a 2-3-minute pause so that trays down a little before the next batch. if i hurry, i'll wear a wet cloth from the outside to help get the temperature down faster.

that extra fan thing is not overbearing at all! Of which, five minutes can descend to 2.5-3 minutes. It's cheap too, I bought 30 thousand.

from the bottom, the air canyon goes up through the hole. I used a power supply laptop to start the fan. If you don't want to be difficult, you can use a big USB fan, just take it from the bottom.

it also depends on what kind of batch rate your target is. if you want to hit 3-4 batches per hour, quick cooling is not optional anymore, it's mandatory. the warm seeds in the storage can also make condensate in the bag and it makes the stall faster.

don't forget to check the balls before they get in the bag. the way it's simple, grab a handful of beans, if there's a warm sensation in the palms, it means it's not ready for packaging.
