coffee from roast is shiny and greasy, that means something's wrong?

abis roasting, biji kopinya keliatan berminyak dan mengkilap. gw khawatir itu tanda kopi gosong atau over roast

teman yang lain bilang itu normal, tapi gw kurang yakin. ini apa yang sebenarnya terjadi?

it's normal for a certain level roast, not a broken coffee mark. The oil that came out was natural lipid from inside the coffee beans which migrated to the surface of the cell time inside broken bean due to heat and CO2 building-up. The darker roast, the more oil comes.

untuk light sampai medium roast, biji harusnya relative kering permukaannya. kalau light roast sudah berminyak banget, itu bisa indikasi over-roast atau development yang terlalu lama. untuk medium-dark ke dark, berminyak itu expected dan normal.

one thing to pay attention to: the oily seeds are faster still. the lipid exposed to the air could oxidize and so the range is faster than a drier seed. so the stunt needs to be more careful.

and those oily seeds could be a problem in a certain grinder. the residue oil could build up in grinder burrs and disrupt the consistency of grinding.

so shiny it's not always bad huh? I always thought it was overoast. Turns out it depends on the roast target

konteksnya penting. lihat roast level yang dituju. kalau target light roast tapi minyak sudah banyak muncul, itu over. kalau medium-dark dan berminyak, itu normal.
